After 25 year as an Executive Pastry Chef in many Michelin starred establishments from The Aubergine in London to El Celler de Can Roca in Catalunya, I have been captivated by the many charms of chocolate and have become a Chocolatier.

In 2001 I developed a new technique that allows you to taste the true flavour of the chocolate;
